Work at the vineyard : Conversion to organic agriculture, with the objective of being certified in 5 to 7 years. The vines are strictly dis-budded, leaves are thinned out and ground is plowed. The grapes are 100% hand harvested.

Wine-making : Plot selection for all cuvées. Slow press for the Chardonnay grapes, cold maceration and slow extraction for the Pinot Noir. We have developed a strong partnership with Thierry Doreau, from Doreau Tonneliers. Alcoholic and malo-lactique fermentations are conducted in their oak bar-rels, and wines age on fine lees during 10 months for the whites and 12 for the reds. Wines are not fil-tered, to keep authenticity and richness.
