The Chablis region is the northernmost wine district of the Burgundy region in France. The Chablis appellation area represents 6,830 ha, divided into four classifications: Petit Chablis, Chablis, Chablis 1er Cru and Chablis Grand Cru.
The cool climate of this region produces wines with more acidity and flavors less fruity than Chardonnay wines grown in warmer climates. The Chablis Appellation d’Origine Contrôlée is required to use Chardonnay grapes solely.
The grapevines around the town of Chablis make a dry white wine renowned for the purity of its aroma and taste. In comparison with the white wines from the rest of Burgundy, Chablis wine has typically much less influence of oak. Most regular Chablis are unoaked, and vinified in stainless steel tanks.
The Vrignauds family, based in the village of Fontenay-près-Chablis, has been winegrowers for five generations.
They started planting in 1er cru Fourchaume with the climate of the Côte de Fontenay in 1955. In 1975, they planted the rest of their vines around Fontenay near Chablis and also Fleys for the 1er cru Mont de Milieu.
It is a family concerned about quality and who absolutely believe in the importance of working in the vineyard, in the respect of nature and biodiversity.
In 1999, Guillaume Vrignaud started to bottle his first wines and decided to build a new winery.
The year 2009 marks the beginning of organic certification by Ecocert. According to him, organic agriculture is not an end in itself, it is a way of thinking, a way of revealing the terroir.
In 2012, all of Guillaume’s wines were certified organic and have been certified organic ever since.
Guillaume makes Petit Chablis, Chablis, Premier Crus and Grand Cru, the four levels of the Chablis hierarchy.

This young winegrower is also in permanent search of new experiments, always with the aim of respecting the terroir, the environment and the know-how acquired over several generations in order to produce quality wines.
He wants his wines to reflect the terroir and its character: lively, mineral and of great finesse. He wishes to deliver lively, authentic and energetic Chablis wines.
