The Domaine Charly Nicolle is in Fleys, a small village with a population of around 150, built on the nothern slopes of a hill between Chablis and Tonnerre, in the heart of the premier crus "Mont de Milieu" and "Les Fournaux". The Property is managed by Charly Nicolle, 7th generation of a family of viticulturists.
The Domaine covers 26 hectares (64 acres). Everything is implemented in the vineyards in order to obtain a harvest of great quality. The de-budding is rigorous, and the pruning restrained.
The property is entirely integrated viticulture which induces the optimisation of the vine’s biology, the respect for the environment, the natural fight against insects that ravage the vines, and the work on the soil.
Chemical insecticides as well as root attacking herbicides are banned from the Domaine. The wines are vinified in stainless steel tanks. Fermentation is at low temperatures (16°C) in order to maximise the development of the floral characteristics in the wine.
The wines are aged on the lees and are typical of the appellation with a lovely minerality with aromas of the white flowers.
